5 Easy Go-to Meatless Summer Meals

Here’s 5 easy go-to meatless vegan recipes you must try.

1. Vegan Gyros: 

These are a delicious and healthy alternative to the traditional Greek dish. To make vegan gyros, start by marinating mushrooms in a mix of olive oil, lemon juice, garlic, and oregano. Then, roast the mushrooms in the oven until they’re tender. Once the mushrooms are cooked, let them cool before slicing them into thin strips. Next, assemble the vegan gyros by placing the mushroom strips on a pita bread with lettuce, tomatoes, and vegan tzatziki sauce. Enjoy!

2. Vegan Wrap 

This is easy, and there are a few different ways to do it. One way is to use vegan tortillas or wraps, which you can find at most stores these days. Another option is to use collard greens or other large leafy greens. Simply trim the stem off of the greens, and then lay them out flat. Fill them with your favorite fillings – I like to use hummus, avocado, tomato, and cucumber – and then roll them up tightly. If using collard greens, you may want to secure them with a toothpick. 

Another option is to use nori sheets, which are traditionally used for sushi. These are slightly tricky to work with, but make for a delicious and unique vegan wrap. Simply lay out the nori sheet, and then top with your desired fillings. Roll it up tightly, and then slice into bite-sized pieces. No matter which method you choose, vegan wraps make for a healthy and delicious meal that’s perfect on the go.

3. Vegan Ramen 

This is a hearty and delicious dish that can be made with a variety of vegan ingredients. The key to making a successful vegan ramen is to choose a good vegan broth, which can be made with vegetable stock, seaweed, and mushrooms. Once you have your vegan broth, you can add in any vegetables or tofu that you like. For a traditional ramen flavor, you can also add in miso paste and soy sauce. If you want to spice up your vegan ramen, you can add in chili oil or Sriracha sauce. Once you have added all of your desired ingredients, simply cook the ramen until the noodles are soft and the broth is hot. Enjoy!

4. Pesto Veggie Pasta

This is a flavorful and hearty dish that is perfect for a quick week night meal. The pesto sauce is super easy to make and can be made ahead of time.To make the pesto sauce, simply combine all of the ingredients in a food processor or blender and pulse until smooth. The key to a good pesto sauce is to use fresh ingredients. I like to use basil, parsley, garlic, pine nuts, and lemon juice. You can also add in some arugula or spinach for an extra green kick. 

Once the pesto sauce is made, simply cook the pasta according to package instructions. I like to use brown rice pasta, but you can use any type of pasta you like. While the pasta is cooking add some broccoli,  carrots and some green peas and let it cook with the pasta, drain then  simply toss it with the pesto sauce and serve. I like to top mine with some freshly grated Parmesan cheese and a sprinkle of crushed red pepper flakes. Enjoy!

5. Vegan  mac and cheese: 

This vegan recipe is the perfect solution. It’s rich and creamy, with all the flavor of traditional mac and cheese but without any of the dairy. Plus, it’s super easy to make. 

First, start by cooking the pasta according to package instructions. Meanwhile, in a saucepan, combine vegan butter, flour, and nutritional yeast. Stir until the mixture is smooth, then slowly add in almond milk, whisking continually until the sauce has thickened.

Once the pasta is cooked, drain it and add it to the saucepan with the sauce. Stir until everything is evenly combined, then transfer to a serving dish and enjoy. You won’t even miss the dairy in this delicious vegan mac and cheese recipe!
